Berries

It's important to change up my shakes from time to time.  Not too long ago I gave my son his regular shake and to my dismay he didn't touch it.  Now, he is two years old and getting super picky these days.  (He always asks for milk, that's goat's milk, and raisins.)  So when he just wants to eat those two things, I throw my hands up in the air in frustration.  Oh!  What's a mama to do?

Luckily, I quickly figured out that he he's like his grandma.   He still enjoys shakes but he has to try new and different concoctions.

I was craving something different for breakfast this morning.  So I peeked in the refrigerator, the freezer, and the pantry, and I just took some items out.

I was in the mood for blueberries and blackberries.  I love them because they are full of wonderful nutrients and antioxidants.  So I came up with this berry coconut shake with some really good for you toppings.  I love it and hope you will too!

    


 

Crunchy Blueberry Blackberry Coconut Shake

 

Ingredients

3/4 cup coconut milk beverage, unsweetened

3/4 cup organic frozen blueberries

1/3 cup organic frozen blackberries

1/2 small banana

Dash of cinnamon

1 tsp coconut flakes, unsweetened

1  to 2 tsp flaxseed meal

1 tsp chia seeds

1 tbsp coconut oil

1 tbsp coconut manna

3 ice cubes

 

Toppings (These add crunch to your shake so please don't omit.)

Toasted coconut chips lightly salted, to taste (I use Dang brand.)

Raw chocolate cacao nibs, to taste

A few organic blueberries (optional)

 

Directions

Add all of the ingredients in a blender and blend till smooth.  Pour it into a glass.  Then add your toppings.  You can also include a few pieces of fruit like blueberries.
